Prepare the pitted dates one by one, by making a vertical cut carefully, just enough to remove the seed.
Almond Butter Stuffed Dates
Prepare the blanched almonds by boiling them in water for 3-4 minutes and then peel the skin off.
Take all the ingredients (almonds, butter, honey, ground cinnamon and lemon juice) in a food processor or grinder. Pulse until a thick paste is formed. Use a few tablespoons of water if needed.
Using a small spoon, stuff the dates with this paste. Place an almond on top for garnish or a raisin along with chocolate shavings. Serve and enjoy!
Pistachio Coconut Stuffed Dates
Prepare the pistachios by boiling them in water for about 3 minutes and then peel the skin off.
Take all the ingredients (pistachios, shredded coconut, butter, honey and sea salt) in a food processor or grinder. Pulse until a thick paste is formed. Use a few tablespoons of water if needed.
Using a small spoon, stuff the dates with this paste. Garnish with shredded coconut or slivered pistachios. serve and enjoy!
Notes
The two stuffings with the given measurements should be sufficient to yield 25 medium sized stuffed dates of each type.
