As Kashmiris, dates, basil seeds and firni are staples in our Ramadan menu generally. In this post, I’m sharing a very easy recipe to give your dates a makeover once in a while. If you like these stuffed dates, you might want to check out these ideas to make fancy basil seed puddings as well. Currently, I’m experimenting with firni, since we eat loads of firni this month. I have taken the inspiration for the stuffing for these dates from the much loved Mediterranean dessert, Baklava. I have used the same nut-based stuffings for the dates as you would use in between the filo sheets for Baklava. Of course Baklava is an exquisite delight with no comparisons, but a tad tedious to put together. These stuffed dates may not be as indulgent a sweet treat but you’ll surely enjoy the Baklava-like flavours offered in a healthier dessert/snack, which, more importantly, is much easier to whip up. I have tried just almond and pistachio fillings but I’m sure using walnuts would also be a good idea.

Easy nut-butter stuffed dates

An easy recipe for dates with a baklava-inspired stuffing

Ingredients
  

  • Pitted dates

Almond butter stuffing

  • ½ cup Almonds Blanched and peeled
  • 1 tsp Butter
  • 1 tbsp Honey
  • A pinch Ground Cinnamon
  • 1 tsp Lemon juice
  • Almonds, chocolate shavings & raisins for garnish

Pistachio Coconut stuffing

  • 2 tbsp Pistachios Shelled, blanched and peeled
  • 2 tsp Shredded coconut
  • 1 tsp Butter
  • 1 tsp Honey
  • A pinch Sea salt
  • Shredded coconut & slivered pistachios for garnish

Instructions
 

  • Prepare the pitted dates one by one, by making a vertical cut carefully, just enough to remove the seed.

Almond Butter Stuffed Dates

  • Prepare the blanched almonds by boiling them in water for 3-4 minutes and then peel the skin off.
  • Take all the ingredients (almonds, butter, honey, ground cinnamon and lemon juice) in a food processor or grinder. Pulse until a thick paste is formed. Use a few tablespoons of water if needed.
  • Using a small spoon, stuff the dates with this paste. Place an almond on top for garnish or a raisin along with chocolate shavings. Serve and enjoy!

Pistachio Coconut Stuffed Dates

  • Prepare the pistachios by boiling them in water for about 3 minutes and then peel the skin off.
  • Take all the ingredients (pistachios, shredded coconut, butter, honey and sea salt) in a food processor or grinder. Pulse until a thick paste is formed. Use a few tablespoons of water if needed.
  • Using a small spoon, stuff the dates with this paste. Garnish with shredded coconut or slivered pistachios. serve and enjoy!

Notes

  • The two stuffings with the given measurements should be sufficient to yield 25 medium sized stuffed dates of each type.
  • The approximate calories are calculated for one serving which includes one date stuffed with almond butter (82 kcal) and one date stuffed with pistachios and coconute (71kcal).
